Acai Bowl


The BEST breakfast! Actually, it’s the best anytime!! Makes 4 small bowls, 2 medium, or 1 XL bowl! Measurements below have ranges so that you can adjust based on how much you want to make. I honestly don’t measure, just throw it all in the blender and then taste and add more fruit and/or yogurt if needed. I recommend using frozen fruit so that when blended, the yogurt has a nice frozen texture. (Remember, you can always make your own frozen fruit. This is a great way to ‘rescue’ berries that are about to turn, just freeze them!) In a pinch, you can make this without acai, but it will not have that delicious tang and be just more like yogurt with fruit and granola (which is of course, still yummy!). Also, if you chill the bowls ahead of time, it keeps the chill longer when served; I never remember to do this and it’s still perfect


INGREDIENTS

1-2 packets Trader Joe’s frozen organic pureed açaí (can use another brand but should be 100% açaí)

½-1 banana, fresh or frozen (see below)

1-2 c frozen blueberries or frozen mixed berries or other combo of frozen fruit that includes blueberries (my favorite is blueberries and strawberries)

4-8 oz plain unsweetened yogurt (your choice of coconut or oat or dairy based yogurt)

Unsweetened almond milk or coconut milk or oat milk

1 scoop unsweetened unflavored protein powder (optional)

Fresh berries (any combo of strawberries, blueberries, blackberries, raspberries)

Pecan Granola (see recipe) or any homemade granola


Place açaí, banana, frozen berries, yogurt, and a generous splash of milk (and protein powder if desired) in blender, begin to blend adding more liquid or more frozen fruit until it’s a smooth frozen yogurt texture. Divide between chilled bowls, and top with generous portions of granola and fresh berries. Eat immediately and be happy all day!!
