Mango Salsa

I could eat the entire bowl with a spoon! Any variety of ripe mangoes may be used but the texture and creamy sweetness of Ataulfo mangoes is simply the best!


This salsa can be used in so many ways... as a topping for salad, guacamole, burrito bowls, tacos, tortillas, or avocado halves. Share your favorite in the comments!

INGREDIENTS

2-3 Ataulfo mangoes, peeled, seeded, & diced

2 small or 1 large jalapeño pepper, seeded & finely diced 1 small red bell pepper, seeded & finely diced

1 small orange bell pepper, seeded & finely diced

1/4 c finely diced cilantro leaves

1 T very finely diced red onion

juice of half a lime

dash of kosher salt


METHOD

Combine all ingredients in bowl, cover and refrigerate for at least an hour to allow flavors to combine. Serve and enjoy!
