These beans take less than 10 minutes to make, have great flavor, and can be eaten alone or layered with other foods. Want more? Just double the beans, you won't need another can of chipotles, but may want to add some of the peppers themselves in addition to the adobo sauce.
INGREDIENTS
1 can organic black beans, not drained
1 can organic pinto beans, drained but not rinsed
1 can chipotle peppers in adobo sauce
dash of salt, if desired
METHOD
In a saucepan, combine the black beans (and their liquid), drained pinto beans, and the adobo sauce (chipotles removed). If you want it spicier, add some or all of the chipotle peppers (chopped, or blended in the adobo sauce with an immersion blender). Add dash of salt to taste, if desired. Cover and heat on medium until warmed through. These can also be heated in the microwave.
Serve as a side dish, serve alone garnished with avocado and cilantro, over brown rice or other whole grain, or as the filling for bean tacos, or in a burrito bowl. Endless possibilities! Great leftover, can also freeze in smaller portions for later.
