Trader Joe's Holiday Vegetable Hash


Do yourself a favor and get this Holiday Vegetable Hash before it's gone. I first noticed it while shopping before Thanksgiving, and put it in my cart because it looked interesting. And easy. Veggies already diced and combined with fresh herbs (I LOVE fresh herbs!)... worth a try, right? Truthfully, I don't actually love butternut squash, nor sweet potatoes, nor celery, nor onion, and would not have purposely combined these veggies. So I owe a huge thank you to my cashier at Trader Joe's that day, because she was so enthusiastic when she saw the container in my cart. She excitedly told me that it was her new favorite item! She described using it as a filling for tacos, combining it with soy 'chorizo' for a breakfast hash, and cooking it with cranberries and farro. It all sounded so delicious that I grabbed another package from the shelf that day, and I was SO glad I did because it was love at first bite!


First, I tried one of the cashier's suggestions... I sauteed the hash in a little olive oil, then added a package of vegan chorizo. I generally avoid meat or cheese substitutes because they are very processed, but I tried a brand with a short ingredient list and a good chorizo flavor. Delicious!


I also cooked this hash with some chopped chipotle peppers, added a can of black beans, and it was a deliciously spicy veggie layer for burrito bowls.


After Thanksgiving, I added fresh cranberries to leftover cooked hash, combined it with leftover wild rice pilaf, and served in baked delicata squash. The tartness of the cranberries balanced the sweetness of the hash and squash, and gave a wonderful flavor and texture combo.


My favorite use though is for a giant breakfast veggie hash. I add diced jalapeño pepper, spinach, and any leftover roasted veggies I have on hand (mushrooms, multi-colored bell peppers, shaved brussels sprouts, zucchini, broccoli, etc). So yummy and colorful and flavorful!


I like to cook a large batch (sauteed or roasted) ahead, and then just reheat with any other ingredients. I also have some of this heavenly hash cooked and frozen so that I can enjoy it even after it's no longer in the store.
